Scoring Bread Dough
This is an interesting article by King Arthur Flour about the correct way to score a loaf of bread. I didn’t know this. I just made my Rye Whole Wheat Sourdough Bread a couple of days ago, and I scored it with a series of diagonal slashes across the top of the loaves (see the first picture below). But, I didn’t know that I was supposed to wait until the bread was risen to make the cuts. I scored my loaves before their final rise. So my loaves came out with shallow, indistinct score lines, instead of the deeper cuts that I was hoping for. (see below)
